CamStudio is a good rec app. It can slow down you system (altho' I haven't had problems running Chankast fullspeed while recording on a 2.4ghz), but hey it's freeware, so no complaints from me.

You didn't mention what formats you wanted to convert to/from, which can make it kinda hard to recommend what progs to use. As good as vDub is, it's not the ultimate converting prog out there (I doubt there is one). I usually stop by Videohelp's, they've got all the answers (and guides) you need. Just click "all guides" choose your formats (remember to choose "all guides" in the drop down manu), and you're good to go
