You might be experiencing inestabillity because of your RAM frequency and timings. While you were listing your system's components you failed to mention something very important: your motherboard. Aside from that you didn't specify your RAM timings as well. Overclocking is also trial and error, basically all you do is experiment which FSB (and multiplier in case you got an ES or use AMD CPUs) is right for you. FSB/memory dividers are also helpfull.
