Hunter is a helicopter (AH-64 Longbow Apache), and Harrier like plane is Hydra.

You use Hunter using keys WSAD and on numerickeypad (dont remember exacly but try arrows or 9,3 kyes)
Hydra is simmilar but you can use aditional 2 keys to control angle of thrusters (i think its 8 and 2 keys)

I know how to navigate plane, but the plane is flying slow like a helicopter, and I
have to sklope him forward. What I need to do to make the plane fly fast
(like when you have six stars wanted level and that plane is chaseing you)

I just told you that Hydra have 2 additional keys to move thrusters. (you used those additional keys in mission where you had this big helicopter and had to steal armoured van)
You need to press one of this keys and hold for 2-3 sec to change angle of your thrusters.

I don't know what system you are using, but on the xbox, you click the right thumb stick to alternate between jet mode and hover mode. hope this helps.
