Out of the 9600 series, what are the advantages, pros and cons of the 9600XT and the 9600Pro?

The 9600XT is faster. No cons there.

The Pro range are the middle of the road cards, the XT range are the top end cards.

Basically just as Ranzy said

Just get the damn card and stop asking qustions!

If you still must know, the XT is better, newer, and powerful. (Same card "boosted" and uses a new chip)

Cons:
It is not a 9700.

That's not (always) true for videocards though, like in this case. The 9600XT with 128MB is faster than the 9600 Pro with 256MB. Heck, 256MB on anything lower than a 9800XT only slows the card down. Only choose for 256MB when you're buying a high-end card.
